Hangover Breakfast!

When you’re feeling a little worse for wear on a Saturday morning and want something a little more filling than porridge. The main focus is herby potatoes, garlicky mushrooms and balsamic roasted cherry tomatoes which you can then add a few of the usual suspects to. 

Serves 1

What you need:

For the Potatoes (Per person):

  • 1 potato peeled quatered and sliced
  • 1/2 tsp of smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp of Herbs de Provence
  • Salt and Pepper

For the Tomatoes (Per person):

  • 6 cherry tomatoes Quartered or 2 Salad Tomatos quatered and halfed again.
  • 1 tsp of balsamic vinegar
  • 1 tsp of red wine vinegar
  • 1/2 tsp of Agave Syrup
  • Salt and Pepper
  • 1/4 tsp Minced Garlic or Lazy Garlic

For the Mushrooms (Per Person):

  • 4 closed cup mushrooms
  • 1/2 tsp of Garlic Powder
  • 1/2 tsp Minced Garlic or Lazy Garlic
  • Salt and Pepper
  • 1tsp of Vegan Butter (Optional)

Additional Sides (All Optional) Cook as per packet instruction:

  • Linda Mcartney Sausages or other vegan sausages
  • Baked Beans
  • Wholemeal Toast

What you need to do:

  1. Pre heat oven to Gas Mark 6.
  2. Mix all ingredients for potato together in a bowl and spray with a little oil. Put on baking tray and bake for 20 mins turning gradually.
  3. Whilst potatoes are in the oven mix together tomatoes and ingredients in a bowl and spoon into a foil boat. Do the same with the mushrooms.
  4. Take potatoes out to turn and add boat of tomatoes and boat of mushrooms onto same baking tray (if they’ll fit!) along with any sausages you may want for 1o mins.
  5. After 10 mins add butter to mushrooms (optional) and put tray back in oven for further 5 minutes. At this point put any toast or beans on to cook that you may want.
  6. SERVE UP AND ENJOY!
